Easy & Healthier Slow Cooker Pulled Pork

A Healthier Option To Pulled Pork In The Slow Cooker!

Yes, Please!!!!

It’s summer! This means extremely hot days (especially if you live in the desert like me), and kids being bused around to sleepovers, camps, and all the other activities.
No one wants to turn on the oven or stove!

That’s why I love using my slow cooker and Instant Pot during the summer! Even better…it makes life even easier when you prep “dump recipes”, and keep them at-the-ready for you in the freezer!

Ingredients

4 lb of Pork Butt or Shoulder

1 Tsp Salt

1 Tsp Garlic Powder

1 Tsp Smoked Paprika

2 Tsp Vinegar (I use Apple Cider, but any vinegar will do)

1 Cup BBQ Sauce (I use Primal Kitchen Unsweetened)

1 TSP Raw Honey (any natural sweetener will work)

How To

Combine Spices in a bowl and rub all over Pork.

Pour Vinegar into bottom of slow cooker.

Cook on High for 5 Hours or Low for 7 Hours. (I highly recommend the slower method…comes out tender).

Mix BBQ Sauce and Honey in bowl. (Use the same bowl you used for spices!).

Open lid and pour sauce mixture over Pork, close lid and cook on Low for 1 more hour.

Open lid and shred Pork in pot, mixing with all the sauce and juice.

Enjoy on a grain bun, a gluten free bun, or just as a side with some coleslaw or salad!
