GF (no bake!) Carrot Cake Bites
Oh, and did I mention … they’re vegan?!
This yields 15 bites
Ingredients
1/2 cup (about 5) medjool dates, chopped
1 cup shredded carrots
1 cup blanched almond flour
1/2 cup shredded coconut + more for topping if you’d like!
1/2 cup chopped pecans
1/4 cup creamy almond butter
1 tablespoon maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
pinch of sea salt
The How To
Soften Your Dates: Add dates to a food processor or blender and pulse a few times to break them down.
Mix It Up: Add the rest of your ingredients, and pulse a few more times to blend everything into a chunky batter that easily sticks together.
Keep on Rollin: Use wet hands and a spoon or small ice cream scoop to roll the mixture into even-sized balls. Roll in your shredded coconut for more texture and flavor.
Chill Out: Place your balls onto a parchment paper lined tray and chill in the fridge for 45 minutes.
Serve cold or at room temperature - ENJOY!
