GF (no bake!) Carrot Cake Bites

Oh, and did I mention … they’re vegan?!

This yields 15 bites

Ingredients

  • 1/2 cup (about 5) medjool dates, chopped

  • 1 cup shredded carrots

  • 1 cup blanched almond flour

  • 1/2 cup shredded coconut + more for topping if you’d like!

  • 1/2 cup chopped pecans

  • 1/4 cup creamy almond butter

  • 1 tablespoon maple syrup

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • pinch of sea salt

The How To

  • Soften Your Dates: Add dates to a food processor or blender and pulse a few times to break them down.

  • Mix It Up: Add the rest of your ingredients, and pulse a few more times to blend everything into a chunky batter that easily sticks together.

  • Keep on Rollin: Use wet hands and a spoon or small ice cream scoop to roll the mixture into even-sized balls. Roll in your shredded coconut for more texture and flavor.

  • Chill Out: Place your balls onto a parchment paper lined tray and chill in the fridge for 45 minutes.

  • Serve cold or at room temperature - ENJOY!
