GF Lemon Cookies

I love me some lemon bars. However, now that I am wiser to what my body likes and what it doesn’t like I know I have to stay away from the amazingness that makes a ooooey gooey lemon bar. So, when my mom made my kids delicious, sweet smelling lemon bars, my taste buds went crazy. I decided to seek out recipes that I could attempt in order to satisfy the lemon bar cravings. And VIOLA! I mashed some together and discovered this mouth watering cookie! Enjoy!

Ingredients:

1.5 cups of Gluten Free All Purpose Flour Mix

1/2 TSP Xanthan Gum (Omit if flour contains Xanthan Gum)

1/2 cup of Butter (or non-dairy butter replacement)

1 cup of Sugar (I use Monkfruit Replacement if looking for less sugar)

1 Large Egg

1/2 Tsp GF Baking Powder

Zest of one Lemon

1 TBSP Lemon Juice

1/2 TSP Vanilla Extract

1/4 TSP Salt

The How To:

Cream together butter and sugar.

Add egg, vanilla, lemon zest, and lemon juice and mix to combine.

In a separate bowl mix flour, xanthan gum, baking powder, and salt together.

Slowly combine flour mixture into sugar mixture.

Place in fridge about 30 minutes.

While batter sets preheat oven to 325.

Prepare cookie sheet with parchment paper.

When batter has set, spoon about a tablespoon of batter for each cookie.

Wet hands to flatten out cookies to about 1/4 to 1/2 inch thick.

Bake for about 14 minutes, or until you notice the edges start to brown. (They will seem undercooked and really soft, but I assure you they are done! Do not over bake them!)

Let cool on sheet for 5 minutes before transferring to plate.

Try to not eat one for the next five minutes! Ha! Happy eating!
