Maple Apple Cinnamon Donuts

I know. Donuts are not the healthiest food for you. But, when you get the craving, and want to dig in, this is such a yummy alternative than the donut shops! If you want a true Gluten Free donut, read the labels of your ingredients. Baking Powder and flours can sometimes be misleading, so be sure to read your labels. You can also switch up the flavors with whatever your sweet tooth desires.

Ingredients

1 1/2 Cups Gluten Free Flour (Either store bought or homemade baking blend. I like Bob’s Red Mill.)

1/2 Tsp Xanthan Gum (Omit if flour already contains it.)

1/2 Tsp Cinnamon (or more if you love it like I do)

1/2 Tsp Salt

1 Tsp Baking Powder

3/4 Cups Monk Fruit Sweetener (Or other sugar alternatives you enjoy)

3 Tbsp Coconut Oil (Melted)

1/2 Tsp Pure Vanilla Extract

2 Eggs Room Temperature (You can also use Flax eggs)

1 Cup Applesauce (I love using my homemade applesauce.)

For Glaze:

1 Cup Powdered Monk Fruit (You can find it on Thrive Market or Amazon…or use powdered sugar.)

1/4 TSP Cinnamon

1 Tsp Pure Vanilla Extract

4 TBSP Pure Maple Syrup

The How To

Preheat the oven to 350’

Wipe down your donut pan with coconut oil.

Mix together M.F. Sugar, eggs, applesauce, and coconut oil in a large bowl.

Add G.F. flour, xanthan gum (if needed), cinnamon, salt, and baking powder to the sugar mix, and blend til combined. Don’t worry if it turns out thick and sticky. That means you did it right.

I like using a gallon size plastic bag to pipe my batter into the donut pan. If you choose to use a spoon, you will end up using your fingers! It’s a sticky mess, trust me.

Bake for about 14-17 minutes. They should be golden brown in color.

In a smaller bowl whisk all go the glaze ingredients together while the donuts cool for about 10 minutes.

Dip the still somewhat warm donuts in the glaze and place them on a wire rack to set. (Place a towel under the wire rack for an easier clean up.) This will be the most difficult part…try not to eat them before they are set.
