Sausage And Potato Soup

I can’t believe I finally found a soup my son will actually eat. I think it’s the sausage and potatoes. It makes it feel like a stew. Yummy.

INGREDIENTS

5 Cups Chicken/Turkey Broth (Turkey is our favorite)

1/4 Cup Chopped Parsley

1 Sprig of Rosemary

1 Bay Leaf

1 LB Ground Pork (I use MOINK Pork Sausage seasoned with dried sage and pepper)

1 Medium Diced White Onion

1 Larege Carrot Sliced

2 Minced Garlic Cloves

3 Cups Diced Potatoes (I like Red, but any kind will do)

1/4 TSP Pepper

2 TBSP Extra Virgin Olive Oil (Cold Pressed)

Salt & Pepper to taste

THE HOW TO

Heat oil in pan.

Cook Sausage, Onions, and Carrots Cook until Onions are soft.

Add Garlic and Potatoes and Cook for 1 minute.

Add Broth, Parsley, Rosemary, and Bay Leaf. Boil until Potatoes are tender.

Add Salt & Pepper to taste.

***Serves 6-8 (Depending on appetite)
