Chicken Soup

Ahhhh. That is truly THE word that comes to mind when I think about chicken soup. Whether the household is battling a cold or it’s just cold winter weather outside, this soup makes me feel all the goods inside and out. My mom and my grandmother have always made this soup in the cold season…I’m pretty sure they new what they were doing!

Ingredients:

1 Whole Chicken

8-10 Cups Water (depending on size of your pot)

2 Carrots Chopped

2 Celery Stalks Chopped

1/2 Head of Cabbage Chopped

1 Onion Chopped

1 Can Tomato Paste

Salt & Pepper to taste

The How To:

Place chicken and water in pot.

Bring to a boil.

Boil until chicken is cooked through (about 2-3 hours depending on size of chicken).

Add all of the other ingredients to the pot and simmer for about an hour.

When all veggies are soft and chicken is cooked, pull out chicken and set to the side.

Depending on how your household serves up soup, you can remove the veggies, or leave them in the broth.

Shred the meat when the chicken is cooled.

You can cook up some noodles and make it chicken noodle soup. My mom always used Ditalini.

Make up a bowl of broth and mix in any of the veggies, chicken meat, and noodles. Or maybe just noodle, just veggies, just meat. Whatever sounds good.

Lastly…Sit down and Enjoy that warm and fuzzy feeling. This soup is so beneficial to everyone in the household, sick or not! All the vitamins and minerals that are packed in this will boost your immune system and prepare it for battle…if a virus isn’t already attacking!!!
