Avocado Toast
Avocado toast is a very popular menu item right now. Just be mindful of the ingredients blended in when going for this amazing dish. Some are loaded with extra saturated fats and dairy that are not necessary. I love the freshness and citrus flavor in this recipe. Simple whole ingredients.
I buy my Gluten Free bread at the store to make a lunch out of it, or spread it on sweet potato slices. I even dunk my Organic tortilla chips or pre prepped veggies in it for a quick afternoon snack. If you don’t have an egg allergy, spoon some on top for a tasty breakfast. I even have been known to mix it in with a baked potato on heavy training days, or with a salad on lighter days. It can add amazing flavor to so many plates.
Ingredients: 4 - 2 TBSP servings
1 Medium Avocado
1 TBSP Fresh Chopped Parsley
1 TBSP Chopped Green Onions
3 TSP Fresh Lemon Juice (Yes, Fresh!!! Not From A Jar!!!)
1 TSP Olive Oil
Salt & Pepper To Taste
The How To:
Throw everything in a bowl and mash and mix. Voila, you are done! Add toppings if you want even more nutrient kick. I love using radishes, peppers, and cut up kalamata olives. You could even throw some nuts or seeds on top…get your seed cycling checked off for the day!

Garlic Aioli
Mix in a bowl: 1/2 Cup of Vegan Mayo, 2 Large Garlic Cloves Minced, 1/2 Tsp Ground Mustard, 2 Tsp Lemon Juice, 1/8 Tsp Cayanne
Spread on Gluten Free Bread (Or any bread or veggie slice your prefer) Top with Avocado spread.
***Sprinkle with Red Pepper Flakes for an amazing kick!!! So delicious. I also love some micro greens on top for added nutrients and crunch!
