Coconut Breakfast Parfait
Anything I can put in a jar for a few days in the fridge, is my new favorite breakfast or snack food. If I can make it ahead of time, the rest of my week will be gold! These parfaits are so delicious, I would even say you could serve it as a desert! Packed with nutritious ingredients like Chia Seeds and additional berries of your choosing, GOOD fats from coconut milk, it’s hard to turn this down.
Ingredients (makes 4- 8 oz mason jars)
2 - 15 oz Cans Full Fat Organic Coconut Milk
2.5 TBSP Maple Syrup
1.5 TSP Cinnamon
1/2 TSP Vanilla Extract (you can also use vegan bakers vanilla)
1/2 Cup Chia Seeds
Pinch Salt
Toppings (optional)
Homemade Jam-see note below
Homemade granola (or any quality store bought granola-I make my own Gluten Free Granola)
Nuts (I prefer pecans or walnuts)
Fresh Berries (we love strawberries and raspberries with the coconut)
Chopped Fresh Fruit (apples, pears, any that you enjoy)
The How To
Place all ingredients in a bowl and whisk together until it looks creamy. (You can also place all ingredients except for the chia seeds in a blender and blend until smooth, then pour into bowl and stir in Chia Seeds)
Pour liquid into mason jars, or leave in bowl.
Place in fridge. In the morning it will solidify like a pudding.
Top it for breakfast, a snack, or a desert with whatever you are in the mood for, or eat it as is.
Note: To make a healthier Homemade Jam simply add 1 diced pear, 2 cups of frozen or fresh berries, 3 TBSP of honey, (maple syrup or coconut sugar) and 1 TBSP of lemon juice to a pot. When the berries begin to soften and liquify, turn off heat and blend it up with and immersion blender (or throw the ingredients into a blender) and mix blend smooth. This will keep in your fridge for about 2 weeks in a closed container.
